- 2 red peppers
- 2 courgettes
- 8 oz tenderstem broccoli
- tablespoon olive oil

Preparation
Step 1
Drizzle 2 tablespoons of olive oil over the vegetables and mix well to ensure each piece is coated. Place a griddle pan over a medium heat.
Step 2
Once warm, add the vegetables and cook, undisturbed, for 5 minutes, before turning over and cooking on the other side for 5 minutes. You will need to do this in a couple of batches.
Step 3
While the vegetables cook, make the dressing by placing all of the ingredients into a mug and mix until smooth.
Step 4
Once the vegetables have cooked, remove and mix through the dressing.
