- 4 medium carrots, roughly chopped carrots
- 3 tablespoons olive oil
- 2 garlic
- 240g canned chickpeas
- 2 tablespoons tahini
- ½ lemons
- 1 teaspoon ground cumin
- 1 splash water
- pinch of sea salt

Preparation
Step 1
Preheat the oven to 220°C / 200°C fan / 425°F.
Step 2
Place the carrots onto a baking tray with a drizzle of olive oil and salt.
Step 3
Roast in the oven for 30 minutes until soft, adding the garlic cloves in the last 10 minutes. Once soft, remove and leave to cool.
Step 4
Once the carrots and garlic are cool, simply place all of the ingredients (apart from the water) into a food processor.
Step 5
Blend until smooth and creamy, adding a splash of water if needed.
