Ingredients
2 servings
- 300g mushrooms
- 1 onion
- 3 cloves garlic
- 240g canned butter beans
- 2 tablespoons almond butter
- 1 vegetable stock cube
- 1 x 400ml coconut milk
- 1 tablespoon brown rice miso paste
- pinch of sea salt
- drizzle of olive oil
- dash of almond milk

Preparation
Step 1
Place a large pan over a medium heat and add a drizzle of olive oil. Once warm, add the onion, garlic and a pinch of salt and cook for 5-10 minutes until soft. Once soft, add the mushrooms and mix well. Leave to cook for 5-10 minutes until the mushrooms feel soft and reduce in size.
Step 2
At this point, stir through the butter beans, almond butter, veggie stock cube, miso paste and coconut milk. Mix well and leave to simmer for 10 minutes.
Step 3
Pour the mixture into a powerful blender or use a hand blender to blend the mixture until it reaches a smooth consistency.
Step 4
Once smooth, pour the mixture back into a pan and warm through over a medium heat - you may want to add a dash of almond milk, bit by bit, until you reach the consistency you like best.
