- 6.4 oz dried mango
- 3.5 oz dried apricots
- 50g pistachios
- 3.5 oz almonds
- 3.5 oz porridge oats
- 1 tablespoon of chia seeds

Preparation
Step 1
Place the dried mango into a bowl and cover with boiling water. Leave to soak for 10 minutes to soften.
Step 2
After 10 minutes, drain the water from the dried mango and place into a powerful food processor.
Step 3
Add the dried apricots and blend until a thick mixture comes together.
Step 4
Add the pistachios, almonds, porridge oats and chia seeds and blend again until the mixture comes together, with a few small chunks.
Step 5
Line a loaf tin with baking parchment and spoon in the mixture. Smooth over with the back of a spoon and place in the fridge to set for at least 1 hour.
Step 6
Once the mixture holds its shape, cut into small bars or bite-sized chunks. Enjoy or store in the fridge in an airtight container for up to a week.
