  • 1x 400g can pumpkin puree
  • 7 oz coconut sugar
  • 9 oz plain flour
  • 1 teaspoon bicarbonate of soda
  • 1 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground nutmeg
  • 4 tablespoons almond milk
  • 3 tablespoons coconut oil
  • 3.5 oz raisins

Preparation

Step 1

Preheat the oven to 180C (355F), fan setting. Line a 900g/30oz loaf tin with baking parchment.

Step 2

In a large bowl, mix together the plain flour, coconut sugar, bicarb, baking powder and spices until there are no lumps.

Step 3

Add the pumpkin puree, almond milk and melted coconut oil and mix really well until a smooth batter forms.

Step 4

Once the mixture is smooth, mix through the raisins and spoon everything into the lined loaf tin.

Step 5

Cook for 45-50 minutes until golden and a knife inserted in the centre comes out clean – if it doesn’t, place back in the oven for 5-10 more minutes.

Step 6

Once cooked, remove from the oven and leave to cool a little before enjoying.
