Ingredients
- 1 butternut squash
- 1 small head broccoli
- 2 sweet potatoes
- 1 carrots
- 2 white onions
- 2 red onions
- 1 cauliflower

Preparation
Step 1
Peel and slice the butternut squash into ½cm-thick pieces and cut the cauliflower into florets. This is used for the butternut squash, lentil & tofu traybake salad and warm cauliflower, kale & chickpea salad on day 1.
Step 2
Finely chop one of the red onions for the one pan quinoa chilli on day 2.
Step 3
Finely chop 1 medium white onion and 1 red onion. Cut the broccoli into florets. These will be for your day 4 recipes.
Step 4
Peel and cut 1 sweet potato, (about 130g / 5 oz) into bite-sized pieces. Peel a carrot and finely chop it, and a red onion for your day 5 recipes.
Step 5
Chop 1 sweet potato, (about 130g / 5 oz) into 2cm / 1″ cubes. This is for your day 6 recipes.
