- 200g pitted Medjool dates
- 3.5 oz pistachios
- 100g cashews
- 1 teaspoon of matcha powder
- pinch of sea salt

Preparation
Step 1
Pulse half of the pistachios in a food processor until they are broken into small pieces.
Step 2
Remove and leave to one side in a bowl.
Step 3
Add the dates to the food processor along with the cashews, matcha powder, the remaining pistachios and salt.
Step 4
Blend until everything has mixed together and formed a nice sticky dough.
Step 5
Roll the mixture into 12 equal sized balls and roll each one in the other half of the chopped pistachios until totally covered.
Step 6
Place the balls in the fridge for an hour to set, then store in an airtight container in the fridge.
