- 2 pears
- 3 ripe bananas
- 3 tablespoons melted coconut oil
- 4 tablespoons plant-based milk
- 8.1 oz spelt flour
- 7 oz coconut sugar
- ½ teaspoon of bicarbonate of soda
- 1 teaspoon of baking powder
- A handful of 70% cocoa dark chocolate chips

Preparation
Step 1
Preheat the oven to 180C, fan setting. Line 10 muffin cases.
Step 2
Peel the pears, then cut them into small cubes and leave to one side.
Step 3
Mix the flour, coconut sugar, bicarb and baking powder together in a large bowl. In a separate bowl, mash the bananas until smooth, then add the almond milk and coconut oil and stir together.
Step 4
Combine the wet and dry ingredients, then add the pear cubes and dark chocolate chips before giving everything another really good mix. Pour the mixture into the muffin cases.
Step 5
Bake for 25 minutes, until the muffins are golden and a knife inserted in the centre comes out clean.
Step 6
Once cooked, leave the muffins to cool in their tray for at least 10 minutes, which allows them to finish firming up, then transfer them to a wire rack to finish cooling or serve them warm out the tin.
