  • 16 pitted Medjool dates
  • 250g peanut butter
  • 3.5 oz pumpkin seeds
  • 10.6 oz porridge oats
  • 6 tablespoons of brown rice syrup
  • 2 tablespoons coconut oil
  • pinch of sea salt

Preparation

Step 1

Preheat oven to 180c, fan setting.

Step 2

Place the dates into a food processor, along with 2/3 of the oats, peanut butter, pumpkin seeds, coconut oil, brown rice syrup and salt – blend until completely combined. Once combined, add the last of the oats and give it another very quick pulse to mix through.

Step 3

Spoon the mixture into a line baking tray and smooth over using a spoon.

Step 4

Cook for 15 minutes until golden.

Step 5

Leave to cool before cutting into equal bars.
