2 servings
- 1 onion
- 16 oz peas (frozen/fresh)
- 3 tablespoons of coconut yoghurt
- ½ lemons
- 17 fl oz water
- pinch of sea salt & black pepper
- drizzle of olive oil

Preparation
Step 1
Place a pan over a medium heat and drizzle with olive oil.
Step 2
Add the onion and cook until soft and translucent, about 5-10 minutes.
Step 3
Once the onion is cooked, add in the peas and water.
Step 4
Bring to the boil before reducing the temperature and letting it simmer for 15-20 minutes.
Step 5
When everything is soft and cooked, remove from the heat and add in the coconut yogurt, lemon juice, salt and pepper.
Step 6
Give everything a really good whizz with a hand blender until smooth.
