- 6 large vine tomatoes
- 2 cloves garlic
- 1 small red onion
- 3 slices good-quality sourdough bread
- large handful of basil
- 1 x 280g jar marinated artichoke hearts
- 1 lemon
- pinch of sea salt & black pepper

Preparation
Step 1
Toast the bread. Once toasted, rub each piece with a garlic clove — this makes it taste absolutely delicious. Cut each slice of toast into bite-sized pieces.
Step 2
Finely slice the rest of the garlic and place in a large bowl with the rest of the salad ingredients.
Step 3
Mix everything really well to ensure all of the ingredients are coated in the oil.
Step 4
Spoon into a large bowl to serve.
