- 7 oz cherry tomatoes
- drizzle of olive oil
- pinch of sea salt & black pepper

Preparation
Step 1
Put a splash of olive oil into a frying pan on medium-high heat. Once hot, add the tomatoes and fry for 5 minutes until soft. Add the garlic and fry for 30 seconds until fragrant. Set aside.
Step 2
While the tomatoes cool, make the hummus. Place the chickpeas, garlic, lemon juice, ground cumin, tahini and 100ml / 3.4 fl oz of oil into a food processor. Blitz until smooth and creamy; add salt to taste.
Step 3
Serve the hummus in a wide bowl, top with the tomatoes and scatter with fresh basil.
