- 3.5 oz polenta
- 250g plain flour
- 7 oz ground almonds
- 10 fl oz maple syrup
- Zest and juice of 2 oranges
- 200ml olive oil
- 1 teaspoon baking powder
- 1 teaspoon bicarbonate of soda

Preparation
Step 1
Preheat the oven to 180C (350F), fan setting.
Step 2
Place all of the dry ingredients into a large bowl and whisk well to remove any lumps. Once combined, pour in the olive oil, maple syrup, orange zest and orange juice - whisk again until a smooth batter forms.
Step 3
Pour the mixture into a lined 23cm cake tin, and bake for 45-50 minutes until cooked through.
Step 4
Once cooked, remove from the oven and leave to completely cool.
Step 5
Whisk together the maple syrup and orange juice and pour over the top of the cake before serving.
