Ingredients
2 servings
- 3 cloves garlic
- 7 oz chestnut mushrooms
- 1 red pepper
- 1 yellow pepper
- 1 courgette
- 3.5 oz baby corn
- 3.5 oz mangetout
- pinch of sesame seeds
- drizzle of toasted sesame oil
- pinch of sea salt

Preparation
Step 1
Place a large pan over medium heat and add a drizzle of sesame oil. Once warm, add the garlic and a pinch of salt. Mix well and cook for a couple of minutes until soft.
Step 2
Once soft, add the remaining sliced vegetables and the mangetout. Mix well and leave to cook until the courgette becomes soft — this should take about 10 minutes.
Step 3
While the vegetables are cooking, make the sauce by whisking together the brown rice miso paste, maple syrup, almond milk, lime juice, tahini and a pinch of salt, until smooth. Add a dash more almond milk if the sauce is slightly too thick.
Step 4
Once the vegetables are soft, pour over the sauce and mix well. Serve topped with a sprinkle of sesame seeds.
