- 6.5 oz porridge oats
- 3.5 oz plain flour
- 2.4 oz ground almonds
- 7 tablespoons of maple syrup
- 4 tablespoons coconut oil
- 1 teaspoon baking powder
- pinch of sea salt

Preparation
Step 1
Preheat the oven to 180C (355F), fan setting.
Step 2
Place the oats, flour, ground almonds, baking powder and salt into a large bowl and mix well to remove any lumps. Add in the maple syrup and melted coconut oil and mix until well combined.
Step 3
Scoop out balls of the mixture using an ice cream scoop or large spoon, and roll into ball shapes using your hands. These cookies are much easier to shape when your hands are a little wet.
Step 4
Place the balls onto a lined baking tray and push down a little to form cookie shapes.
Step 5
Bake for 15-20 minutes until golden.
