Preparation

Step 1

Prepare the skewers by threading an equal number of pieces of courgette, onion and tofu onto each skewer.

Step 2

Place a griddle pan over medium heat, with a drizzle of olive oil. Once warm, add the skewers and cook, undisturbed, for 5 minutes, before turning over and cooking on the other side for 5 minutes. Repeat until lightly charred all over.

Step 3

While the skewers grill, make the dressing by placing all of the ingredients in a bowl and mix until smooth.

Step 4

Once the vegetables skewers are cooked, place on a plate, drizzle over the dressing and serve.
