- 7 oz chestnut mushrooms
- 1 tablespoon toasted sesame oil
- 1 tablespoon olive oil
- 1 tablespoon tamari
- 1 tablespoon brown rice miso paste
- 1 tablespoon maple syrup
- 1 tablespoon mirin
- 1 tablespoon of sesame seeds
- 2 red chillies
- pinch of sea salt

Preparation
Step 1
Mix together the oil, tamari, maple syrup, brown miso paste and mirin into a smooth paste.
Step 2
Place a pan over a medium heat and add a drizzle of sesame oil.
Step 3
Cook the mushrooms until soft and tender, around 5-10 minutes.
Step 4
Mix the dressing through the mushrooms and sprinkle with sesame seeds and fresh chillies.
