Ingredients

- 150g rice noodles
- 1 tablespoon peanut butter
- 200ml coconut milk
- 9 oz button mushrooms
- 1 teaspoon of brown rice miso paste
- 1/2 limes
- 2 spring onions
- ½ teaspoon cayenne pepper
- 1 red chilli
- pinch of sesame seeds
- 1 tablespoon toasted sesame oil
- pinch of sea salt & black pepper
- pinch of sea salt

Preparation
Step 1
Cook the noodles as per instructions on pack. Once cooked, drain and leave to one side.
Step 2
Place a pan over a medium heat and add a drizzle of sesame oil, the mushrooms, salt and some pepper and cook for 5-10 minutes until soft.
Step 3
Add the coconut milk and nut butter, stir well and cook for a couple more minutes before adding the lime juice.
Step 4
Add the spices and miso paste and cook for another 5 minutes before stirring through the spring onions and drained noodles.
Step 5
Top with more spring onions, a sprinkle of sesame seeds and some fresh chilli.
