- 2 aubergines
- 2 tablespoons toasted sesame oil
- 1 tablespoon tamari
- 2 tablespoons of date syrup
- 1-2 tablespoons of brown rice miso paste
- 2 tablespoons mirin
- 2 red chillies
- 2 tablespoons of olive oil
- pinch of sesame seeds

Preparation
Step 1
Preheat oven to 190C (375F), fan setting.
Step 2
Mix together the oil, date syrup, brown miso paste and mirin into a smooth paste.
Step 3
Cut lines into the aubergine halves and pour over the paste. Place onto a baking tray and cook in the bottom of the oven for 40 minutes until soft. If not completely soft after this time, place back in the oven for 5-10 more minutes.
Step 4
Once cooked, remove from the oven and sprinkle with sesame seeds and fresh chillies.
