Ingredients
4 servings
- 1 small red onion
- 2 cloves garlic
- 2 sticks of celery
- 3 carrots
- 1 tablespoon tomato purée
- 240g canned red kidney beans
- 1 tablespoon nutritional yeast
- 400ml vegetable stock cubes
- 400g can of chopped tomatoes
- 150g brown spaghetti
- tablespoon olive oil

Preparation
Step 1
Place a pan over a medium heat and add a drizzle of olive oil.
Step 2
Add the onions and garlic and cook for 5 minutes to soften up.
Step 3
Add the celery and carrots and cook for 5-10 minutes until soft.
Step 4
Add the tomato puree and cook for another 2 minutes.
Step 5
Add the veggie stock, tinned tomatoes, beans and nutritional yeast and simmer for 15-20 minutes, adding a dash of water if needed.
Step 6
Once ready to serve, add the drained pasta and serve.
