Ingredients
1 loaf
- 2 tablespoons ground flaxseeds
- 7 oz courgettes
- 6 oz self-raising flour
- 2.6 oz ground almonds
- ½ teaspoon baking powder
- ½ teaspoon fine sea salt
- 6 oz coconut sugar
- 2.5 oz olive oil
- 3.5 fl oz soya milk
- 1 lemon
- 1 lime
- handful of flaked almonds

Preparation
Step 1
Preheat the oven to 160°C fan / 350°F. Line a 1kg / 2lb loaf tin with baking parchment. In a small bowl mix the flaxseed with 6 tablespoons of water; set aside for 10 minutes to thicken.
Step 2
Tip the courgette into a clean tea towel and squeeze out as much liquid as you can; set aside.
Step 3
Sift the flour into a large bowl, then stir in the ground almonds, baking powder, salt and coconut sugar.
Step 4
Pour in the olive oil and soya milk, fold together until just combined. Add the courgettes, lemon zest, lime zest and flaxseed mixture, and briefly mix together; pour the batter into the tin (it will be quite thick) and decorate with the flaked almonds.
Step 5
Bake for 70–80 minutes, until golden and a skewer inserted into the middle comes out clean. Cool in the tin for 15—20 minutes before slicing. Delicious with a cup of tea or coffee.
