- 1 head broccoli
- 1 onion
- 2 cloves garlic
- large handful of spinach
- large handful of kale
- 1 vegetable stock cube
- 2 tablespoons nutritional yeast
- 1 tablespoon olive oil

Preparation
Step 1
Place the broccoli into a pan of water with a pinch of salt, over medium heat. Boil for 10 minutes until soft.
Step 2
Once the broccoli is cooked, drain and leave to one side, keeping the broccoli water for later.
Step 3
Put the onions and garlic in a pan over medium heat and drizzle with a little olive oil; cook for 5–10 minutes until soft.
Step 4
Add 300ml / 10 fl oz of the reserved broccoli water, the broccoli, spinach and kale; cook for 10 minutes until everything has wilted.
Step 5
Add the stock cube and nutritional yeast; cook for another 5–10 minutes.
Step 6
Using a hand blender, blitz everything together until smooth and serve.
