- 7 oz ground almonds
- 8.8 oz coconut sugar
- 7 oz buckwheat flour
- 6.7 fl oz almond milk
- 6.8 fl oz maple syrup
- 1 teaspoon bicarbonate of soda
- A handful of 70% cocoa dark chocolate chips

Preparation
Step 1
Preheat oven to 190C (375F), fan setting.
Step 2
To make the blondies, place the ground almonds, coconut sugar, flour and bicarb into a large bowl and mix well to remove any lumps.
Step 3
Add in the almond milk, maple syrup and chopped nuts or chocolate (if using) and mix well until a smooth batter forms.
Step 4
Pour the batter into a lined baking tray and cook for 35-45 minutes until cooked through but still a little fudgy - if they feel like they need a little longer, place them back in the oven for another 10 minutes.
Step 5
Remove from the oven and leave to cool to room temperature, before cutting into equal blondies.
