  • 7 oz coconut sugar

  • 1 teaspoon bicarbonate of soda
  • 1 teaspoon baking powder
  • 8.5 fl oz almond milk
  • 3 ½ tablespoons of melted coconut oil
  • 3.5 oz raisins
  • 1 teaspoon ground cinnamon
  • 1 teaspoon ground nutmeg
  • 3 teaspoons ground ginger

Preparation

Step 1

Preheat the oven to 180C (350F), fan setting. Line a loaf tin with baking parchment.

Step 2

In a large bowl, mix together the flour, coconut sugar, ground almonds, bicarb, baking powder, cinnamon, nutmeg and ginger - mixing well until there are no lumps.

Step 3

Pour in the melted coconut oil and almond milk, and whisk well until a smooth batter forms.

Step 4

Finally, stir through the raisins.

Step 5

Pour the mixture into the loaf tin and bake for 50-55 minutes until cooked through.
