  • 2 tablespoons coconut oil
  • 3.4 fl oz water
  • 1 teaspoon chia seeds

Preparation

Step 1

Simply peel the bananas, weigh them, then place the bananas, mango, oats, chia seeds, coconut oil, nut butter, water and salt into a food processor.

Step 2

Whizz for a minute or so until the mix is nice and smooth.

Step 3

Then transfer the mix into a bowl and stir in the blueberries.

Step 4

Let the mixture sit for 5-10 minutes before you start cooking, so the mixture can thicken up. This part is really important to make sure the pancake batter thickens up enough to cook.

Step 5

While the mixture sits, heat up a non-stick frying pan and grease it with a little coconut oil.

Step 6

Once it's really hot, put a heaped tablespoon of the pancake mixture into the pan and allow it to cook for about two minutes, before flipping it over and letting the other side cook until brown.

Step 7

These pancakes are really small so even in a small pan you can get three or four going at the same time.
