  • 5.3 oz coconut sugar
  • 3 tablespoons maple syrup
  • 0.8 fl oz water
  • 1 lemon
  • 12 oz porridge oats
  • 4 oz frozen berries
  • pinch of sea salt

Preparation

Step 1

Preheat oven to 180°C fan / 400°F. Grease and line a 20cm / 8″ square baking tin with oil and baking parchment.

Step 2

Put the olive oil, sugar, maple syrup, water and lemon zest into a saucepan and bring to a simmer (don’t worry if it splits slightly). Stir in the porridge oats and a pinch of salt. Pour the mixture into the lined baking tin and press down with the back of a spoon until level.

Step 3

Sprinkle over the frozen berries, then lightly press them into the flapjack mixture. Bake for 30 minutes until golden brown. Leave to cool completely in the tin before lifting out and slicing into 9 squares. Store in an airtight container.
