- 150g pasta
- 1 tablespoon olive oil
- 3 cloves garlic
- ½–1 teaspoon dried red chilli flakes
- 240g canned cannellini beans
- 1 x 17 fl oz jar passata
- 2 tablespoons balsamic vinegar
- 1 teaspoon tamari/soy sauce
- 1 teaspoon maple syrup
- 1 large handful of spinach
- 1 oz basil
- pinch of sea salt & black pepper

Preparation
Step 1
Cook the pasta in a pan of boiling salted water for 8-10 minutes, until al dente. Drain, reserving a cupful of cooking water and set aside.
Step 2
While the pasta cooks, warm the olive oil in a large frying pan set over medium heat. Add the garlic and chilli and cook for 1 minute, until fragrant.
Step 3
Stir in the cannellini beans, passata, balsamic vinegar, tamari (or soy sauce) and maple syrup, and season generously with salt and pepper. Simmer for 3-4 minutes, until slightly reduced, then roughly mash with a potato masher or the back of a fork.
Step 4
Next, add the spinach and the basil, stirring until wilted. Taste to check seasoning and adjust as needed.
Step 5
Pour in the cooked pasta, adding a couple of tablespoons of pasta cooking water to loosen if needed. Divide between the bowls and scatter over the remaining basil and a drizzle of olive oil.
