Ingredients
2 servings
- 1 onion
- 3 cloves garlic
- 150g pasta
- 7 oz chestnut mushrooms
- large handful of spinach
- large handful of basil
- handful of sage leaves
- ½ lemons
- 2 tablespoons coconut yoghurt
- pinch of sea salt & black pepper
- tablespoon olive oil

Preparation
Step 1
Place a pan over medium heat and add a drizzle of olive oil; add the onion and garlic and cook for 5–10 minutes until soft.
Step 2
Meanwhile, cook the pasta according to the packet instructions. Once cooked, drain and set aside.
Step 3
Add the sliced mushrooms to the onion and garlic and cook for 5–10 minutes until soft. Stir through the spinach and leave to wilt for about 2 minutes.
Step 4
Once everything is cooked, mix through the herbs, lemon juice, yoghurt, drained pasta, a pinch of salt and a crack of fresh pepper.
