Preparation
Step 1
Preheat oven to 220°C / 200°C fan / 425°F. Place the cashew and sunflower seeds in a small bowl and cover with the boiling water; set aside for 5 minutes. Meanwhile, bring a large saucepan of lightly salted water to the boil, add the gnocchi and simmer for 2 minutes to par-cook. Drain and set aside.
Step 2
Tip the soaked cashews, sunflower seeds, their soaking liquid, garlic, spinach, oat milk, lemon juice and nutritional yeast into a blender and blitz to form a thick sauce. In a small casserole dish, stir the sauce through the gnocchi and add the frozen peas.
Step 3
For the topping, put the breadcrumbs, parsley, nutritional yeast, sunflower seeds and oil into a bowl with a pinch of salt and mix so that everything is coated. Sprinkle on top of the gnocchi and bake for 15–20 minutes until golden and simmering.
