- 75g dried pasta
- 3.3 oz cauliflower
- the leaves from the cauliflower
- 100g bechamel sauce
- 2 tablespoons cashew cream
- 1 tablespoon olive oil
- large pinch of sea salt

Preparation
Step 1
Bring a pot of water to the boil and add salt. Add pasta and cook according to packet instructions.
Step 2
2 minutes before the pasta is done, add the cauliflower and let it cook with the pasta. Drain, reserving a mugful of the cooking water.
Step 3
Return the pasta and cauliflower to the pan and add the béchamel sauce and cashew cream. Add a generous splash of pasta cooking water and cook for 1 minute over medium heat, until you have a glossy sauce coating all of the pasta and cauliflower.
Step 4
Heat a drizzle of oil in a small frying pan. Add the cauliflower leaves and sauté until softened. Season with salt and pepper to taste.
Step 5
Serve the pasta, sauce and cauliflower leaves in a bowl; eat immediately.
