- 3 courgettes
- handful of pine nuts
- 1 baking tray kale
- 1 tablespoon apple cider vinegar
- 1 large handful of green olives
- drizzle of olive oil
- pinch of sea salt

Preparation
Step 1
Preheat the oven to 200C (400F), fan setting.
Step 2
Place the courgettes onto a baking tray and drizzle with olive oil and salt. Cook for 15 minutes, before adding the kale and pine nuts and cooking for another 10 minutes.
Step 3
Once cooked, remove from the oven and mix everything together before serving.
