  • 1 small head of cauliflower
  • 1 carrot
  • 3.5 oz quinoa
  • 400ml water
  • 1 teaspoon ground turmeric
  • 1 tablespoon curry powder
  • 1 teaspoon ground cinnamon
  • 1.7 oz raisins
  • 50g roasted cashews
  • ½ limes
  • 1 tablespoon tahini
  • 1 teaspoon maple syrup
  • 2 tablespoons olive oil
  • pinch of sea salt
  • 2 large handfuls rocket

Preparation

Step 1

Preheat the oven to 220C (390F), fan setting.

Step 2

Place the quinoa into a pan over a medium heat and cover with 400ml boiling water.

Step 3

Add 1 teaspoon of turmeric and cook for 20 minutes until all of the water has gone and the quinoa becomes soft.

Step 4

Cut the cauliflower into small florets and place onto a baking tray.

Step 5

Mix with 1 tablespoon of curry powder, 1 teaspoon of cinnamon, a drizzle of olive oil and salt and cook for 10-15 minutes until charred on the outside and cooked on the inside.

Step 6

Once the quinoa has cooked, place into a large bowl and grate in the carrot.

Step 7

Add the cooked cauliflower, rocket, raisins, maple, toasted cashews, lime juice, tahini and a pinch of salt.

Step 8

Mix really well so everything is coated in all of the spices before serving.
