- 240g canned chickpeas
- 1 tablespoon olive oil
- ½ teaspoon fine sea salt
- pinch of freshly ground black pepper
- 2 large handfuls iceberg lettuce
- 2 large handfuls cherry tomatoes
- ½ cucumbers
- 1 small red onions
- 1 magic dressing

Preparation
Step 1
Preheat oven to 190°C / 170°C fan.
Step 2
Toss the chickpeas with olive oil on a rimmed baking tray and season with salt and several grinds of pepper. Bake, until darkened and reduced in size, about 25 minutes.
Step 3
Toss the lettuce, tomatoes, cucumber and red onion in a bowl. Top with the crispy chickpeas and drizzle a generous amount of the dressing on top.
