  • 100g ground almonds
  • 3.25 oz plain flour
  • 50g soft brown sugar
  • 6 tablespoons maple syrup
  • ¼ teaspoon of ground nutmeg
  • ¼ teaspoon ground cinnamon
  • ½ teaspoon ground ginger

Preparation

Step 1

Place all ingredients for the cookies in a food processor and mix until the dough clumps together. Tip the dough out onto a clean work surface and knead gently. Form into a round, cover with clingfilm and leave to rest for 20 minutes.

Step 2

Preheat oven to 160°C fan / 180°C.

Step 3

Lightly dust a clean work surface with flour and roll out the dough until it is the thickness of a £1 coin. Cut out the cookies and place onto a parchment lined baking tray.

Step 4

Bake in your pre-heated oven for 10 minutes, or until the cookies have darkened slightly around the edges. Remove from the oven and cool on a wire rack.

Step 5

When the cookies have nearly cooled melt the plant based chocolate in a small saucepan over low heat. Watch carefully and stir frequently as it can easily burn. When it has melted use a rubber spatula to scrape it into a piping bag.

Step 6

Cut a small hole in the tip of the piping bag and use it to decorate the cookies. Stick on the pumpkin seeds, goji berries and dried mango while the chocolate is still melted. Allow to set before eating.
