- 500g red skin peanuts
- 100g 70% cocoa dark chocolate
- 60ml maple syrup
- generous pinch of flaky sea salt

Preparation
Step 1
Preheat oven to 180°C / 160°C fan / 350°F. Place the peanuts on a baking tray and roast for 12-15 minutes until darkened, fragrant and beginning to release their oils. Stir halfway through to ensure even browning.
Step 2
While still warm, add the peanuts to a food processor and blend until smooth and creamy, stopping to take breaks if you’re concerned that your machine is overworking.
Step 3
Add the maple syrup, melted chocolate and flaky sea salt. The mixture will seize up slightly but it will return to smooth and creamy after several minutes of further blending.
Step 4
Store in a jar at room temperature for up to three months.
