- 3.5 oz coconut sugar
- 5.5 oz plain flour
- 2 oz jumbo oats
- 1 teaspoon baking powder
- 3 tablespoons almond milk
- 7 tablespoons of melted coconut oil
- 40g 70% cocoa dark chocolate chips

Preparation
Step 1
Preheat oven to 200°C / 180°C fan / 355°F.
Step 2
Place the coconut sugar, flour and baking powder into a large mixing bowl and mix well to remove any lumps. At this point, mix through the oats.
Step 3
Pour in the almond milk and melted coconut oil and mix well until the mixture comes together to form a thick dough.
Step 4
Add the chocolate chips and stir until they are mixed through.
Step 5
Scoop out equal amounts of the cookie dough and shape into 8 balls using your hands.
Step 6
Place the chocolate chip cookie balls onto a baking tray and push down very slightly.
Step 7
Cook for 12 minutes, until golden.
Step 8
After 12 minutes, remove from the oven and leave to cool a little - they will continue to set during this time.
