Ingredients

- 250g plain flour
- 7 oz coconut sugar
- 3.5 oz ground almonds
- 4 tablespoons of cacao powder
- 1 teaspoon bicarbonate of soda
- 1 teaspoon baking powder
- 1 tablespoon chia seeds
- 6.7 fl oz almond milk
- 100g melted coconut oil
- 1-2 bars of 70% cocoa dark chocolate

Preparation
Step 1
Place the chia seeds into a small bowl and mix through 4 tablespoons of water. Leave to one side to thicken up for 10 minutes.
Step 2
Preheat the oven to 180C (355F), fan setting. Line a baking tray with baking paper.
Step 3
In a large bowl, mix together the flour, coconut sugar, ground almonds, cacao powder, bicarb and baking powder. Mix well until there are no lumps.
Step 4
Pour in the almond milk, melted coconut oil and chia mixture, and mix again until a thick batter forms.
Step 5
At this point, mix through 1 bar of the chocolate, chopped into pieces.
Step 6
Spoon the mixture into the lined baking tray and top with the remaining chocolate chips (or whatever you are using for the topping).
Step 7
Cook for 25-30 minutes until a knife inserted into the middle comes out clean but still a little fudgy. If not fully cooked, place back in the oven for 5-10 more minutes.
Step 8
Once cooked, remove from the oven and leave to cool a little before serving.
