Preparation
Step 1
To make the chocolate sauce, simply place all of the ingredients into a small pan over a low heat and cook until all of the mixture comes together. Whisk to remove any lumps, if the mixture doesn’t become completely smooth - place it into a food blender and pulse until smooth.
Step 2
To make the pancakes, simply stir together the plain flour, baking powder, ground chia seeds, coconut sugar, almond milk, coconut oil and a pinch of salt to form a smooth batter. If it feels a little thin, leave it to sit for 5 minutes.
Step 3
Warm some coconut oil in a pan over a medium heat and add a few large spoonfuls of the pancake batter into the pan, we usually cook about one third of the mixture at a time.
Step 4
Cook on each side for 2-3 minutes until golden and delicious. Repeat this process with the rest of the batter until it is all used up and you have all of your pancakes.
Step 5
Serve the pancakes piled high with a large dollop of chocolate sauce, some fresh sliced banana and a handful of nuts.
