  • 5.3 oz gram flour
  • 8 fl oz water
  • 1 red chilli
  • small bunch of chives
  • 1 small lemon
  • tablespoon olive oil
  • pinch of sea salt & black pepper

Preparation

Step 1

Place the gram flour into a bowl and slowly pour in the water, whisking until the mixture is smooth with small bubbles on the surface.

Step 2

Then stir in the chilli, chives, lemon juice, salt and pepper and whisk.

Step 3

Heat a drizzle of olive oil in a small frying pan (around 20cm / 8″). Once warm, pour in ½ of the batter.

Step 4

Cook for 2–3 minutes, until the upper side is no longer runny. Then flip and cook for a further 2 minutes.

Step 5

Then repeat with the remainder of the batter, to create 2 pancakes.

Step 6

To serve, place the pancakes onto a plate and top with pesto, rocket, cherry tomatoes, a drizzle of oil and a sprinkle of chives and red chilli.
