  • 120g oats
  • 1.6 oz desiccated coconut
  • A large handful of chopped almonds
  • 1 large handful of walnuts
  • 2 tablespoons coconut oil
  • 1 handful of pumpkin seeds
  • 5 tablespoons of brown rice syrup

Preparation

Step 1

Preheat the oven to 180C (350F), fan setting.

Step 2

In a bowl, mix together the oats, seeds, coconut and nuts.

Step 3

Place the coconut oil and brown rice syrup in a pan on the hob, bring to the boil for a couple of minutes.

Step 4

Pour over the oaty mixture, stirring until everything is very well combined.

Step 5

Spread the mixture over a baking tray, ensuring the mixture is still touching, and bake in the oven for about 12-15 minutes until golden.

Step 6

When cooked, take out of the oven and leave to cool down, then break the mixture into chunks.
