- 240g canned chickpeas
- 1 tablespoon olive oil
- 1 teaspoon ground cumin
- 1 teaspoon paprika
- 1 teaspoon black mustard seeds
- 1 teaspoon sea salt

Preparation
Step 1
Preheat oven to 220°C / 200°C fan / 390°F.
Step 2
Place the chickpeas in a baking tray with the olive oil, the spices and salt. Mix well until everything is coated.
Step 3
Place in the oven for 25–30 minutes until the chickpeas are crispy. Once cooked, remove and leave to one side.
Step 4
Toss the cauliflower in the spices, salt and olive oil. Cook in the bottom of the oven for 35–40 minutes.
Step 5
Warm the tortillas through (either in the oven or on the hob) before loading up with a dollop of coconut yoghurt, cauliflower, crispy chickpeas, a handful of lettuce, pinch of chilli flakes and hot sauce (if using).
