- 150g pasta
- 3 cloves garlic
- 2 large carrots
- 250g brussels sprouts
- 2 tablespoons coconut yoghurt
- ½ lemons
- 1 handful of parsley
- drizzle of olive oil
- pinch of sea salt & black pepper

Preparation
Step 1
Cook the pasta according to packet instructions. Place the garlic in a pan over medium heat with a drizzle of oil and cook for 2–3 minutes until soft.
Step 2
Add the grated carrot and chopped brussels sprouts and cook everything for 5–10 minutes, stirring continuously.
Step 3
Stir the cooked pasta through the veggies, along with the coconut yoghurt, lemon juice, chopped parsley and seasoning. Mix well before serving.
