  • 9 oz spelt flour
  • 9 oz strong white flour
  • 1 oz coconut sugar
  • 1 x 0.25 oz sachet fast action dried yeast
  • ½ teaspoon fine sea salt
  • 9 fl oz oat milk
  • 2.5 fl oz maple syrup
  • 60g coconut oil
  • 2 teaspoons vanilla bean paste/extract

Preparation

Step 1

To make the dough, place the flours and sugar into a large bowl or the bowl of a freestanding mixer. Add the yeast to one side of the flour and add the salt to the other side; mix to combine (this stops the salt from killing the yeast). In a small saucepan, mix the milk, maple syrup, coconut oil and vanilla; heat until the coconut oil melts and the mixture is warm, but not boiling. Pour into a bowl and leave to cool until lukewarm.

Step 2

Using your hands or dough hook attachment, gradually mix the wet ingredients into the dry until you have a slightly wet rough dough (you may need a little less/more of the wet ingredients). Knead by hand or run in the mixer for 8–10 minutes, until the dough is elastic and smooth. Cover and leave to prove in a warm place for about 1 hour or until doubled in size.

Step 3

Meanwhile, make the filling by combining the melted coconut oil and maple in a small bowl. In a separate bowl, mix together the coconut sugar and the ground cardamom seeds.

Step 4

Dust a work surface with flour and roll out the dough to form a 40cm x 60cm / 16″ x 24″ rectangle. Brush the maple syrup and coconut oil mix all over the dough and evenly sprinkle the cardamom sugar over the top to cover the dough.

Step 5

Fold the dough in half by placing both short sides together. Lightly roll again to form a 30cm x 40cm / 12″ x 16″ rectangle and slice into 3cm x 30cm / 1″ x 12″ strips. Take one end of a strip, twirl the dough and wrap it around your hand to form a swirl shape, then wrap the dough around the top and secure the end into the bottom. Remember, these don’t have to be perfect shapes, that’s the joy of the cardamom bun.

Step 6

Place the buns, spread evenly apart, on 2 large baking trays, lined with baking parchment. Cover and prove for 1 hour until almost doubled in size. Preheat oven to 200°C / 180°C fan / 390°F.

Step 7

Bake for 20–25 minutes until golden brown. Once baked, brush the warm bun with maple syrup. Either eat warm or allow to cool completely, store in an airtight container and enjoy cold.
