- 1 medium white onion
- 1 medium red onion
- drizzle of olive oil
- 1 tablespoon balsamic vinegar
- pinch of sea salt & black pepper

Preparation
Step 1
Heat a drizzle of olive oil in a heavy bottomed frying pan over medium high heat. Add the onions, a sprinkle of salt and pepper and cook, stirring frequently until softened and caramelised, which will take 35-40 minutes. If the onions catch on the bottom of the pan during cooking, add a splash of water and use a flat-bottomed spatula to scrape it up. 2 minutes before the onions are done, add the balsamic vinegar and stir well to combine. Add salt and pepper to taste. Allow to cool.
Step 2
While the onions are cooking make the hummus. Place all of the ingredients in a blender or food processor with 100ml / ⅓ cup water and mix until smooth and creamy.
Step 3
Before serving, stir ½ of the caramelised onions through the hummus. Pour into a bowl and swirl the remainder of the onions over the surface, topping with fresh parsley, if desired.
