Ingredients

- 500g coconut yoghurt
- 4 teaspoons of maple syrup
- 4 blood oranges
- A handful of chopped pistachios

Preparation
Step 1
Start by zesting the blood oranges.
Step 2
Place the coconut yogurt in a large mixing bowl and whisk using an electric mixer until it becomes thick, about 5-10 minutes. If you don’t have an electric mixer, you can whisk it by hand, it will take around 15-20 minutes.
Step 3
Once thick, add in the zest of 3 oranges, along with a squeeze of the juice and maple syrup.
Step 4
Cut the blood oranges into thin slices and line 4 slices around the edges of each glass.
Step 5
Spoon a quarter of the yogurt into each glass and top with crushed pistachios and the rest of your orange zest.
