  • 1 teaspoon chia seeds
  • 2 tablespoons coconut oil
  • 13.5 fl oz plant-based milk
  • 2 tablespoons maple syrup
  • 3.5 oz 70% cocoa dark chocolate
  • 4–5 bananas

Preparation

Step 1

Sift the flour into a large bowl; stir in the chia seeds and salt.

Step 2

Make a well in the middle of the flour, then pour in the coconut oil, plant-based milk and maple syrup; gradually mix to form a smooth batter. Fold through the chocolate and set aside for 5 minutes to thicken.

Step 3

Warm ½ teaspoon coconut oil in a large frying set over medium heat. Add 1–2 spoonfuls of batter and top with 4–5 slices of banana. Cook for 3–5 minutes, then flip and cook for another 3–5 minutes, until the banana is golden and caramelised. Repeat with the remaining mixture — you should be able to cook 3–4 pancakes at a time, depending on the size of your pan.

Step 4

To serve, divide the pancakes between plates and drizzle over a little maple syrup (to taste). These pancakes are delicious as they are or served with coconut yoghurt and fresh berries.
