Ingredients

- 5.3 oz almonds
- 3.5 oz pecans
- 5 pitted Medjool dates
- 1.7 oz raisins
- 1.7 oz oats
- Zest and juice of half an oranges
- pinch of ground nutmeg
- ½ teaspoon ground cinnamon
- large handful of dried cranberries

Preparation
Step 1
Preheat the oven to 180°C/ 160°C fan /350°F.
Step 2
Place the almonds and pecans in a food processor, taking a handful aside to roughly chop in a moment.
Step 3
Blend the nuts first into a ground flour before adding the rest of the ingredients (except the cranberries).
Step 4
Remove the mixture from the food processor and place in a mixing bowl. Add your roughly chopped nuts and cranberries and mix by hand.
Step 5
Line a baking tray with greaseproof baking paper and using a spoon, press the mixture evenly into a layer about ½ inch thick.
Step 6
Bake in the oven for 8-10 minutes, they will still be a little soft when they come out the oven and will firm up as they cool.
Step 7
Once prepared, store in a Tupperware box in the fridge for up to a week, or in the freezer for up to a month.
