- 5 tablespoons almond butter
- pinch of sea salt
- 6 tablespoons maple syrup
- 2 tablespoons coconut oil
- 14 Medjool dates
- handful of roasted almonds

Preparation
Step 1
Place the almond butter, salt, maple syrup and coconut oil in a pan over low heat. Heat until a thick syrup has formed; you don’t want it to over bubble.
Step 2
Pour the syrup mixture into a food processor with the dates (don't add the nuts at this point) and blend until smooth. The dates need to be of the large, soft medjool variety as this is what creates the fudgy texture.
Step 3
Pour the smooth mixture into a lined loaf tin and smooth over; scatter over the chopped nuts and an extra sprinkling of salt.
Step 4
Leave to set in the fridge for 1–2 hours.
Step 5
Once set, cut into small pieces. Store in the fridge.
