Preparation

Step 1

Steam the chopped sweet potato, cauliflower and courgette for about 10 minutes, until soft.

Step 2

Place the steamed veg in a food processor or blender, along with the remaining ingredients, and pulse everything together until smooth.

Step 3

If needed, pour the soup back into the pan and place over medium heat to warm through.
