- 1 1/4 cup gluten free all purpose flour (with xanthan gum*)
- 1/4 cup almond flour
- 2 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1 1/2 tsp cinnamon
- 1/2 tsp nutmeg
- 1/4 tsp ginger
- 1 cup pure pumpkin puree
- 1/2 cup coconut oil, melted
- 1 1/4 cups granulated sugar**
- 2 large eggs
- 1 tsp vanilla
- 1/4 cup granulated sugar (for cinnamon sugar coating)
- 1 1/2 tsp cinnamon (for cinnamon sugar coating)
