  • 1 1/4 cup gluten free all purpose flour (with xanthan gum*)
  • 1/4 cup almond flour
  • 2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 1/2 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/4 tsp ginger
  • 1 cup pure pumpkin puree
  • 1/2 cup coconut oil, melted
  • 1 1/4 cups granulated sugar**
  • 2 large eggs
  • 1 tsp vanilla
  • 1/4 cup granulated sugar (for cinnamon sugar coating)
  • 1 1/2 tsp cinnamon (for cinnamon sugar coating)
